Guji Daybreak — Light Roast

Ethiopia — Single Origin
Rating: 88.5

Brought to you in partnership with Little Big Dog Rescue, Inc., this bright and expressive light roast showcases the elegance of washed Ethiopian coffee with slightly elevated caffeine and a dense, aromatic presence. The cup opens with a blackberry-like acidity supported by caramel sweetness, followed by subtle notes of plum and black tea. The result is a lively yet composed coffee that delivers clarity without sharpness and brightness without overwhelm—well-rounded, uplifting, and easy to enjoy.

Tasting Profile — Light

A complex and articulate light roast defined by gentle blackberry acidity and warm caramel sweetness. Distinct tea-like qualities lend structure and refinement, while layered berry notes add depth and vibrancy. The cup is bright yet smooth, finishing with lingering sweetness and a softly drying black-tea character that enhances balance and drinkability.

Origin & Region

Ethiopia — Guji

This coffee is sourced from high-elevation smallholder farms in Ethiopia’s Guji zone, where traditional shade-growing and intercropping practices remain central to cultivation. Coffee plants mature slowly at altitude under diverse canopies, allowing sugars and aromatics to fully develop. These conditions contribute to the coffee’s clarity, floral nuance, and refined sweetness—signature traits of exceptional Guji-grown coffees.

Composition

Ethiopian Heirloom Varietals

This single-origin offering highlights Ethiopia’s diverse heirloom varietals, prized for their floral aromatics, fruit-driven complexity, and natural sweetness. These genetically rich varieties deliver exceptional cup quality and flavor diversity, while precise processing enhances structure and balance. The result is a light roast that is vibrant yet grounded, expressive yet cohesive.

Altitude & Processing

1,850–2,100 MASL
Washed & Pulped Natural — Ethiopia

Grown between 1,850 and 2,100 meters above sea level, these Ethiopian beans develop pronounced aromatics and bright, structured acidity. Washed processing emphasizes floral clarity and fruit definition, while pulped natural processing contributes body and foundation. Together, these methods create a layered, balanced cup that showcases high-altitude Ethiopian character while remaining smooth and approachable.
